I have a 1959 edsel with a 223 inline 6 and a 3 speed manual. Will a later model V8 bolt up to the stock trans?

I would definitely measure the bolt pattern before purchasing...you need to make sure your bell housing will bolt up to the motor and trans...

the biggest issue with ford products was there were too many different bell housings and trannies to hook up... where as the Chevies motors would all bolt pretty much to the same trans.

I doubt it... Even the small block bellhousing pattern changed in 64..Later in the 250 six would interchange with the small blocks.. But not the smaller sixes... Ford had many different deals as Ranchero said.. If any of the V8s interchange it would be the Y block stuff and that's a maybe...I do have to believe it's doable if you het a V8 bellhousing but it wouldn't surprise me if the trans to bellhousing could be different as well...
